Ajwain
The Ajwain or Carom seed is fruit small fruit of the Bishop weed. The small fruits are pale brown in color and an oval in shape, resembling caraway and cumin. It has a bitter and pungent taste, with a flavor similar to anise and oregano.
Curry leaves
Curry leaves are small in size and long, slender, and oval in shape narrowing to a point, averaging 2-4 centimeters in length and 1-2 centimeters in width. The shiny, dark green leaves grow pinnately along a stem, and each branch can hold up to twenty, tightly clustered leaves. Curry leaves are extremely aromatic and have a strong flavor that has been compared to citrus, asafoetida, anise, and lemongrass. When cooked, Curry leaves have a mild and slightly pungent bite with a nutty aroma.
Chilly
India is the largest producer and exporter of red chilli. Red chilli powder is pungent with a pepper sweetness and a bright red colour. Green cardamom
This little green pod, Elettaria cardamomum, is quite expensive, coming in at third only after saffron and vanilla. These green pods are often difficult to find and are therefore a bit more expensive than some other prized spices. Smaller pods are thought to be more flavorful and are thus more desirable. Cardamom intensifies flavors in both the savory and sweet realms and is a key ingredient in many spice blends.
Black cardamom
Roughly one inch in length, the pods are dark brown to black in color and have a tough, dried, wrinkly skin. Black cardamom has notes of resin and camphor, as well as menthol, slightly minty aroma that provides balance to an otherwise funky flavor. Considered an aphrodisiac, cardamom has properties that cool the body when it’s hot and warms it when it’s cold.
